I have never been a big fan of lasagna. I know most people that are reading this are saying, "What? You gotta be crazy!" Well, it just seemed like every time I had it there was always this bland sauce or to much cheese or not enough cheese or to many noodles and most of all it never tasted at all healthy. Back when I changed my eating habits to be healthier, every time I got the opportunity to eat lasagna I turned it down. It just was not appealing from a stand point of a healthy meal or taste. My wife got brave one day and made an all veggie version of lasagna and it paid off! Wow, it was delicious! In fact, at first, my lasagna loving buddies did not want to try it at all, but a couple of month later she made it again and they braved trying it. She had made two 9x13 pans of it and within the hour they were nearly gone:)

But the good stuff doesn't stop there...

About a month ago my brother stopped in at WholeFoods and a young lady that worked there gave him a recipe for Healthy Brownies. Again, I am one of the very few that doesn't care for brownies, but I was curious to see what they had in them and what they tasted like.

No Baking, 4 ingredients for the brownie, 4 ingredients for the frosting, and NO sugar, dairy, or junk. Again, DELICIOUS!!

Here are the recipes. Give them a try and see for yourself:

Veggie Lasagna
Spread 1/2 cup of tomato sauce in a 9x13 backing pan. Layer 3 oven-ready spinach lasagna noodles, 1/2 cup of corn (organic and non-GMO), 1/2 cup of black beans (canned or pre-cooked and organic), 1 cup of mozzarella (I am not a fan of dairy or soy so I like cheese from Daiya) ,1 cup of Parmesan (I'd skip this part because I can't find a soy/dairy-free version) , and repeat layers twice. Cover and bake for 30-35 mins on 350°F.
Additional Options:
You can add broccoli, spinach, and or zucchini to your layers for an even healthier and delicious meal.
Healthy Brownies
Ingredients:
2 cups of walnuts
1.5 cups of pitted medjool dates (or any pitted dates)
2 heaping tbsp of cocoa powder
Pinch of sea salt
Method:
Pulse chop ingredients in a food processor or blender until it starts to stick together. Empty mixture onto a cutting board and mold into brownie squares (or mash into a baking pan.)
Frosting Ingredients:
18 dates
1/2 - 1 cup of unsweetened hemp milk or almond milk or coconut milk
1 tbsp of vanilla extract
2-3 heaping tbsp of cocoa powder
Methold:
Blend all ingredients in a food processor or slowly in a blender for a few minutes until smooth and creamy. Frost brownies and enjoy.
Additional Options:
Garnish with shredded coconut and or berries.
